Banana Bread

Banana bread should be at least a monthly staple in everyones home. This is a very simple recipie that turns out a little dense and moist, I love it! It would make a perfect afternoon snack. You could also easily double the recipie and freeze and extra loaves to have on hand.


1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
5 medium overripe bananas (mashed)
1 1/4 cups whole wheat flour
3/4 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt


1.Preheat oven to 350 degrees F. Lightly grease 2 8×4 inch loaf pans.

2.In a medium bowl, combine flour, baking soda and salt. In a large bowl, cream together butter and brown sugar (I like to use a hand mixer). Mix in eggs and mashed bananas until well blended. Hand stir in the dry ingredients until moist (be sure not to over mix and I swear hand mixing the flour in is key). Pour batter into prepared loaf pans.

3.Bake in preheated oven for 30 to 35 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for seven minutes, then turn out onto a wire rack to cool ( I do not have wire racks currently so I just put them on wax paper).

    We must have ESP! I HAVE 5 over ripe bananas and I was just thinking.. I need a good banana bread recipe. I'm going to make it and then let y'all know if Joelle is just making this stuff up.
