2 cups whole wheat flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
3 tsp ground cinnamon
1 cup natural applesauce
2 1/4 cups white sugar
3 tsp vanilla extract
2 cups grated zucchini
(you could add 1 cup chopped walnuts but I opted not to since I was going to feed it to my baby)
1.Preheat oven to 325 degrees F. Grease two 8 x 4 inch pans.
2.Mix flour, salt, baking powder, soda, and cinnamon together in a medium bowl.
3.Beat eggs, applesauce, vanilla, and sugar together in a large bowl. Mix in the shredded zucchini and chopped nuts (if you decided to use them). Add sifted ingredients to the creamed mixture, hand stir well. Pour batter into prepared pans.
4.Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan for five minutes. Remove bread from pan, and completely cool.
