Zucchini Bread

The zucchini bread was and still continues to be delicious! Yummy. I found a recipe on and altered it to make it more healthy, and I think it turned out very good and moist. This would be a great afternoon snack and my 11 month old loves it so that is a plus ( I am always trying to find snacks that are better for her then all the crackers she usually eats). Although the zucchini quest has been fun I am grateful to be done with it for a bit.
1 cup all-purpose flour

2 cups whole wheat flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
3 tsp ground cinnamon
3 eggs
1 cup natural applesauce
2 1/4 cups white sugar
3 tsp vanilla extract
2 cups grated zucchini
(you could add 1 cup chopped walnuts but I opted not to since I was going to feed it to my baby)


1.Preheat oven to 325 degrees F. Grease two 8 x 4 inch pans.

2.Mix flour, salt, baking powder, soda, and cinnamon together in a medium bowl.

3.Beat eggs, applesauce, vanilla, and sugar together in a large bowl. Mix in the shredded zucchini and chopped nuts (if you decided to use them). Add sifted ingredients to the creamed mixture, hand stir well. Pour batter into prepared pans.

4.Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan for five minutes. Remove bread from pan, and completely cool.
