Pico de Gallo

There is nothing better then some fresh pico de gallo! Not to mention how simple it is to make. Mexican food is eaten bi-weekly at our house so of course we have to share its yumminess.

Basically it is a whole lot of chopping followed by a little stirring and chilling.
First the tomatoes.
Then the onion.
Then you smoooosh and roll the lime.
Squeeze the lime.
Add the salt and pepper, stir and poof! You are done.
2 large tomatoes

1 onion
half a bunch of fresh cilantro
1 jalapeno pepper, seeded
2 limes
salt and pepper to taste
1. Chop up the first four ingredients, smoosh and roll out limes on the counter, cut limes in half and squeeze out all the juices (if you really like the lime taste you can cut off the lime pulp and add that too). Add salt and pepper to your liking. Stir, and chill. I think the longer it chills the better.
