No Bake Cookies

No Bake Cookies = Happiness! Since I have a cookie addiction, of course I am posting another cookie recipe. This is an amazing quick recipe for a chocolate fix. They do however take a little bit to set up. But I have eaten them warm in the past and they are soooooooo good.

First, you get the first four ingredients cooking in the saucepan.

Then you get it nice and bubbly, make sure to boil it for one minute.

Then you remove your pan from the heat and add the rest of the deliciousness and stir.

Then you just simply drop them onto wax paper like so and let them cool.

2 cups white sugar

1/4 cup unsweetened cocoa powder
1/2 cup milk
1/2 cup margarine
1 tsp vanilla extract
1/2 cup chunky peanut butter
2 1/2 cups quick cooking oats
1/2 cup coconut flakes


1. In a saucepan over medium heat, combine the sugar, cocoa, milk and margarine. Bring to a boil, stirring occasionally. Boil for one minute, then remove from heat and stir in the vanilla, peanut butter, coconut and oats.

2. Drop by rounded spoonfuls onto waxed paper. Allow cookies to cool for at least 1 hour. Store in an airtight container.

    These are one of Jeff's favorite kinds of cookies. Maybe I will make them sometime for him. 🙂
