Chicken Divan

This is a great meal on a dark and dreary day. My idea of perfect comfort food, and quick to make.
First you start cooking your broccoli, chicken and rice.

 While those are cooking you make your special sauce.

Then you mix your rice and sauce together and put it in the baking dish. Place the chicken and broccoli on top, cover with cheese and breadcrumbs and bake till warm and bubbly.


2 boneless, skinless chicken breasts – cubed
2 cans Cream of Chicken Soup
1 cup milk
1 tsp curry powder
2 heads of broccoli – chopped
6 servings of rice
shredded cheese
bread crumbs


1. Preheat oven to 350 F.

2. Cook rice according to directions on package (I use minute rice), steam broccoli, and cook chicken. (You can cook the chicken however you would like, pan fry, I prefer to bbq, boil.)

3. Mix soup, milk and curry together. When the rice is finished cooking mix with sauce and pour into a 9 x 13 baking dish. Cover with the chicken and broccoli. Sprinkle cheese and bread crumbs over the top. Bake for 25-30 minutes.
