Baked Potato Soup
Tis the season for soups! This is the best soup. I got this recipe from my sister-in-law and it is AMAZING (thanks Beth)!! It is the only soup my brother will eat and I don’t blame him. All of you have to try it at least once because it will change your life.
Then melt the butter and stir in the flour. Stirring constantly for at least one minute.
Slowly add the chicken broth and three cups milk. Keep stirring until it becomes thick.
Add the cheese and sour cream.
Take the boiled potatoes, drain them and mash them with one cup milk. Then add the mashed potatoes to the soup.
Stir in the green onions and pepper.
Take a couple baked potatoes (I just microwave some) chop them up and add them to the soup.
Cook some bacon and chop it up.
Assemble your beautifully delicious soup.
6 medium potatoes
3/4 cup butter
3/4 cup flour
4 cups milk
2 (14oz) cans chicken broth
1/2 bunch green onions – sliced
2 cups shredded cheddar cheese
1 (8 oz) carton sour cream
pepper to taste
6 slices cooked bacon – chopped
1. Peel, wash and chop four potatoes. Place in a pot, cover with water and boil until soft. When soft, drain water and mash with one cup milk.
2. In a large pot melt butter on medium heat. Stir in flour and stir continuously for at least one minute. Slowly mix in three cups of the milk and the chicken broth. Stir until thick. Add cheese, sour cream, mashed potatoes, pepper and chives.
3. Bake remaining two potatoes in the microwave until soft (make sure you poke them with a fork before cooking). Chop the cooked potatoes and add to soup. Simmer for an additional 5-10 minutes. Serve with chopped bacon on top.
