Sweet Potatoes and Apples

This is the perfect side for a Thanksgiving feast! In my opinion a nice alternative to the very sweet marshmallow sweet potatoes.

First peel and wash your sweet potatoes and apples.

Then slice the sweet potatoes. Put them in a pot, cover them with water and let them boil until soft.

While the potatoes are boiling core and slice your apples.

When the potatoes are finished remove 1 1/2 cups of the water they were boiling in and strain the potatoes.

Mix your sauce using the water from the boiled potatoes. Add your apples to the sauce and let them cook until they are a little soft, but not all the way cooked (approx 7 minutes).

 Place the sweet potatoes in a baking dish and cover with the apples and sauce. Bake and enjoy!

Ingredients:

6 sweet potatoes
3 apples
1 1/2 cups water
1/2 cup butter
1 cup sugar
2 tbs cornstarch

Directions:

1. Preheat oven to 350 F.
2. Peel and wash potatoes and apples. Slice potatoes and boil until soft.
3. Bring to boil water (I like to use the water the potatoes boiled in), butter sugar and cornstarch. Add sliced apples to sauce and let simmer about 7 minutes.
4. Place potatoes in a baking dish and cover with apples and sauce. Bake until apples are tender.
