Peanut Butter Cookies

December 2, 2010

These cookies have the perfect combo of crispy outside and soft delicious center. I LOVE cookies so much! I could easily eat cookies every night. With that said here is a wonderful peanut butter cookie recipe.

First you mix the butter, shortening and sugars. Yum…

Then add the eggs and vanilla.

Add the creamy delicious peanut butter, or if you want, crunchy.

Blend it all together till smooth and creamy.

Hand mix in the dry ingredients.

Roll the dough into balls and place on your cookie sheet.

Use a fork and do a criss-cross pattern across the top.

Bake and enjoy with a glass of milk!

1/2 cup butter, softened
1/2 cup butter flavored shortening
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 cup creamy peanut butter
1 tsp vanilla extract
2 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp salt

1. Preheat oven to 375 degrees F.

2. Cream the butter, shortening, and sugars. Blend in the eggs and vanilla. Add peanut butter, mix till smooth and creamy. Add dry ingredients and stir (by hand) until well blended.

3. Roll dough into balls. Place 2-3 inches apart on cookie sheets. Make criss-cross pattern with fork.

4. Bake 6-8 minutes until set, but not hard. Do not over bake. Remove from cookie sheet to cooling rack.
