Sugar Cookies with Icing

December 3, 2010
You can’t go wrong with a sugar cookie. The icing on this cookie is great for decorating, it also dries well so you can stack them easily.

First you blend the butter and sugar.

Then add in the eggs and vanilla.

Hand stir in the dry ingredients. Cover and chill for at least one hour (I usually just chill it overnight).

Roll it out on a floured surface.

Cut with a cookie cutter, or in my case a glass!

Allow cookies to cool completely before icing.

1 1/2 cups butter, softened

2 cups white sugar
4 eggs
1 teaspoon vanilla extract
5 cups all-purpose flour
2 tsp baking powder
1 tsp salt

1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).

2. Preheat oven to 400 degrees F. Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on a lightly greased cookie sheets.

3. Bake 6 to 8 minutes in preheated oven. Cool completely.

Icing Ingredients:

1 cup powdered sugar

2 tsp milk
2 tsp light corn syrup
Food coloring of your choice

1. Mix all the ingredients together until smooth. Divide into separate bowl and add food coloring.
