Brown Sugar Fudge

Tis the week for delicious treats!!!!! I am at home for the holidays and my parents and siblings have been baking like crazy, so this week is going to be sugar filled!!!! LUCKY US! To start off the week we are making a brown sugar fudge that is to die for.

First you get your evaporated milk, brown sugar, butter and salt boiling over moderate heat. Stir frequently.

 Then you add your your candy thermometer and boil until 238 F.

 Beat in vanilla and powdered sugar (a little at a time).

 Beat until the fudge is thick and smooth.

Press into a square 8 inch baking pan. Chill uncovered until firm enough to cut.

Ingredients:

1/2 cup plus 2 tbs evaporated milk
2 cups light brown sugar
12 tbs unsalted butter (cut into tbs)
1/4 tsp salt
1/2 tsp vanilla extract
1 3/4 cups powdered sugar

Directions:

1. Combine milk, brown sugar, butter and salt in a saucepan and bring to boil over moderate heat, stirring until sugar is dissolved.

2. Reduce heat to low and simmer, stirring frequently, until mixture registers 238 F. on thermometer (this takes about 30 minutes).

3. Transfer to a mixing bowl. Beat in vanilla with electric mixer at medium speed, then add powdered sugar a little at a time, until fudge is thick and smooth (about 5 mins).

4. Spread evenly into a square 8 inch pan. Chill, uncovered until firm enough to cut (about 30 mins).
