Ebelskivers

The delicious fluffy pancakes of the Gods!! These are amazing for many reasons….they are round pancakes, you can fill them with whatever you want or eat them plain, you can top them with anything and they are the perfect size!!

My family has been making Ebelskivers as long as I can remember during Christmas break and this year my brother made them and they were some of the best I have ever had. Just a heads up, you will need a ebelskiver pan to make these morsels of heaven.

Here is my brother the chef.

 First you mix everything together but the egg whites.

 Then beat the egg whites.

 And fold them into the batter.

 Pour the batter into the warmed ebelskiver pan. Pan temperature is very important when making these.

If you want to fill them now is the time, we used applesauce and it was seriously the greatest thing in the world.

 Cover them up.

 And when they are good and ready flip them over.

Done and done.

Ingredients:

1 cup flour
1 1/2 tsp sugar
1/2 tsp baking powder
1/4 tsp salt
2 eggs, separated
1 cup whole milk
2 tbs unsalted butter, melted
1/2 tsp pure vanilla extract

Directions:

1. In a large bowl mix together the flour, sugar, baking powder and salt. Then stir in the egg yolk, milk, melted butter and vanilla. Stir until well blended. Batter will be lumpy.

2. In a medium bowl, beat the egg whites until stiff but not dry. Fold the egg whites into the batter just until no white streaks remain. Use batter immediately.
