Lemon Garlic Potatoes

Well if that picture doesn’s scream delicious I don’t know what does. I made these beauties last night to go with our salmon and they were so amazing! I am not kidding, the lemon and the garlic mixture was truly divine. They are also very simple to make which is a plus. I did however have to cook them way longer then the recipe said, and I could have even cooked them longer without the cover on so they could brown. Oh well, you live and you learn.

Ingredients:

2 lbs red potatoes
1/4 cup butter, melted
2 tsp minced garlic
1 tsp salt
1 lemon, juiced
1 tbs grated parmesan cheese

Directions:

  1. Preheat oven to 350 degrees F.
  2. Place potatoes in an 8×8 inch baking dish.
  3. In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
  4. Bake, covered, in preheated oven for 30 minutes(for me it was more like an hour and they still weren’t really cooked, but you might luck out). Uncover and bake an additional 10 minutes, or until golden brown.

    I cook potatoes like this with a whole or cut up chicken .Place the chicken in a roasting pan ,place potatoes all around the chicken.Squeeze the juice of 2 or 3 lemons, 1/4 c olive oil, &course sea salt to taste all over chicken & potatoes. place in oven and cook.

      add a little dried oregano on top to if you like.

        Oh my word! That sounds like it would also be delicious, I will for sure be trying that.
