Bacon Hashbrown Casserole

This is a yummy casserole recipe my mom made when I was home for Christmas and I liked it so much of course I have to share it. Being the AMAZING chef that I am I actually didn’t have the right cheese and forgot the corn flake topping before I baked it, but it was still yummy. I do think if you follow the recipe it does taste a little better, who’d a thunk? And yes it does contain cottage cheese and if you are like me that just seems really weird to be putting in something like this, but don’t worry it is good. I also like this recipe because I like getting my breakfast made the night before if I can, then all I have to do is throw it in the oven. Very convenient if you know you will be having guests spending the night.


8 slices of bacon (cooked and crumbled)
5 beat eggs
2 1/2 cups frozen hashbrowns
1 1/2 cups shredded swiss cheese
1/3 cup cottage cheese
3 green onions sliced
1 tsp salt
1/8 tsp pepper
1 cup crushed corn flakes


  1. Lightly grease a 9 x 13 pan.
  2. Mix all ingredients together except the corn flakes. Cover and chill over night.
  3. Preheat oven to 350 F. Sprinkle the corn flakes on the top before baking. Bake for 50 minutes.
