Tamale Pie

Tamale pie…it tastes just like it sounds, tamale like. Profound I know. So I realize this isn’t the greatest picture in the world but it will have to do. This is a meal my brother has been requesting from time to time when he comes over for dinner. See this is him thoroughly enjoying it. And yes he is wearing an apron so he doesn’t spill on himself…so like his mother. And yes he is single so feel free to date him.

Back to the real reason for this post, the Tamale Pie. This is a dish my mom would make when we were kids and I never really cared for it but since Eben wanted it, being the good sister I am, I called and got the recipe. Holy cow! I was surprised by how many ingredients were in this bad boy. But to be honest, now tasting it when I am older I actually quite like it.

Ingredients:

2 tbs oil
1 cup chopped onion
1 cup chopped green bell pepper
1 lb ground beef
1 can diced tomatoes
2 tbs tomato paste
1 (10 oz) pkg frozen corn
1 cup sliced, stuffed, green olives
1 tbs ground cumin
2 tsp unsweetened cocoa powder
1 1/2 tsp salt
1/2 tsp ground allspice
2 tsp chili powder
1 tbs yellow cornmeal

Tamale Topping:

1 cup flour
1 cup yellow cornmeal
3 tbs sugar
2 tsp baking powder
3 tbs melted butter
3/4 cup milk
1 large egg
1/2 cup shredded cheddar cheese

Directions:

1. Preheat oven to 400 F.

2. In a large skillet heat oil and add onion and green pepper and saute until tender. Add beef and cook until crumbly and no longer pink.

3. Add add remaining ingredients (not tamale topping ingredients) simmer and stir frequently for 30 minutes. Spoon into a 2 1/2 quart baking dish.

4. In a large bowl mix flour, cornmeal and baking powder. Add butter, milk and egg, then stir until dry ingredients are just moistened. Stir in cheese, and pour over casserole.

5. Bake at 4oo F. for  10 minutes then reduce heat to 350 F. and bake for 30 minutes or until cornmeal topping is browned and cooked through.
